Ingredients

  • 2 cups cooked and shredded chicken Leftover cooked chicken or a store-bought rotisserie chicken works well
  • 1 tbsp Olive oil
  • 1 tsp Chili powder
  • ½ tsp Cumin
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • Salt and pepper to taste
  • 8 small Flour tortillas
  • Toppings: Shredded lettuce, diced tomatoes, sliced avocado, shredded cheese, sour cream, salsa, and lime wedges

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the shredded chicken to the skillet and sprinkle with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  • Stir to coat the chicken evenly with the spices and cook for 5-7 minutes, or until heated through.
  • While the chicken is cooking, warm the tortillas in a separate skillet or in the oven according to package instructions.
  • Once the chicken is cooked, remove from heat and set aside.
  • To assemble the tacos, place a spoonful of the seasoned chicken onto each warmed tortilla.
  • Top with your desired toppings, such as shredded lettuce, diced tomatoes, sliced avocado, shredded cheese, sour cream, salsa, and a squeeze of lime juice.
  • Fold the tortillas in half and serve immediately.
